Our Story
Shinmai began in Oakland, California and found its home in Cary, North Carolina. In March 2024, we opened our first restaurant, Shinmai Shokudo, introducing our vision of Japanese-inspired dining built on uncompromising food and service.
In Japanese, shinmai means both “new rice” and “novice,” reflecting our fresh start and curiosity to grow. Founded by Ming, Stacia, and Jayden, Shinmai is a series of chapters—each a different concept—connected by the same foundation: respect for craft and genuine hospitality.
