Our Story

In Japanese, Shinmai translates to 'novice' or 'newbie,' a nod to our fresh start in Cary, North Carolina. Our story began as 'Shinmai' in Oakland, California. Now reborn as 'Shinmai Shokudo,' driven by three passionate women - Ming, Stacia, and Jayden - who share a deep love for authentic and creative Japanese cuisine.

‘Shokudo' in our name represents a place where people gather for comforting dishes, each with a unique touch, just like our signature Tonkotsu ramen.  Crafted from fresh, locally sourced ingredients, our broth is a labor of love, delivering an unforgettable experience.

But we’re not limiting ourselves to just ramen. Head Chef Ming's boundless creativity, fueled by tireless research and experimentation, concocts dishes from local produce, sharing the authentic taste of Japan one dish at a time.
